So it takes about 5-7 minutes to put the ingredients in a big pot (quick and easy), and then takes about 2 hours to simmer till the barley is tender and all ingredients are melded into a delicious broth. It's ideal to cook this kind of soup on weekends or evenings when you are at home doing other things, but can keep an eye on the stove. This soup is made vegan style, with Reishi Spore no meat bone, broth, or other animal products. You could however if you wished add a soup bone to it, depending on where you or your family are in lifestyle habits and food choices.
A recent best-seller, "The China Study" documenting a 35-year study on the effects of diet on health, makes excellent observations on a diet very low in animal products. It demonstrated that all degenerative illnesses could either be reversed or prevented with a very small amount of animal foods in the diet, a maximum 7% (think egg-drop soup). If you are still consuming meat and want to put a soup bone in it, go ahead! Just make sure to add all the "Super Immunity" ingredients along with it. Better yet, if you try it vegan-style, you'll be amazed at how incredibly delicious the broth is because of the concentration of savory ingredients! This soup is also great if you're on a budget because it's very inexpensive to make.
Fill a large soup pot to about half full with 3 quarts water. Turn the burner on high heat, while adding the rest of the ingredients:
3/4-1 cup Pearled Barley (this will swell up to fill the pot)
3-4 fresh Tomatoes peeled and diced, or 1 30 oz. can of diced tomatoes with juice
2 cups or 1 can organic Great Northern Beans
2 diced Carrots
4-5 cloves unpeeled (the paper is high in vitamin C and will cook away) Garlic (contains allicin similar to penicillin)
